Preparation Steps
- Preheat your oven to 400°F (200°C) to ensure even cooking.
- Line a baking sheet with parchment paper or lightly grease with olive oil.
- In a medium-sized bowl, mix together the pistachios, panko, garlic, lemon zest, and herbs. Season with salt and pepper, then drizzle in olive oil.
- Pat the cod fillets dry and place them on the prepared baking sheet.
- Firmly press the pistachio-herb mixture onto the cod fillets.
- Bake in the preheated oven for 12-15 minutes, until the crust is golden brown and the fish flakes easily.
- Meanwhile, whisk together lemon juice, orange juice, honey or maple syrup, and a pinch of salt for the dressing.
