Preparation Steps
  1. Preheat your oven to 400°F (200°C) to ensure even cooking.
  2. Line a baking sheet with parchment paper or lightly grease with olive oil.
  3. In a medium-sized bowl, mix together the pistachios, panko, garlic, lemon zest, and herbs. Season with salt and pepper, then drizzle in olive oil.
  4. Pat the cod fillets dry and place them on the prepared baking sheet.
  5. Firmly press the pistachio-herb mixture onto the cod fillets.
  6. Bake in the preheated oven for 12-15 minutes, until the crust is golden brown and the fish flakes easily.
  7. Meanwhile, whisk together lemon juice, orange juice, honey or maple syrup, and a pinch of salt for the dressing.
  8. Serve the baked cod with the citrus dressing drizzled over and garnish with mint or basil leaves.
