Method
 

Steps
  1. In a small bowl or jar, combine olive oil, white wine vinegar, lemon juice, and minced garlic. Add honey, dried oregano, dried parsley, and mustard, along with salt and pepper. Whisk until blended.
  2. In a large bowl, layer the spring mix, cherry tomatoes, veggie pepperoni, black olives, bell peppers, mozzarella pearls, and fresh basil.
  3. Pour the dressing over the salad and gently toss to coat the ingredients evenly.
  4. Add croutons right before serving for extra crunch. Serve immediately on chilled plates.
