  • 13 ounces Smoked Sausage, sliced or chicken sausage/plant-based options
  • 1 medium Yellow Onion, diced or shallots
  • 1 Red Bell Pepper, diced or green bell pepper
  • 3 cloves Garlic, minced fresh garlic is best
For the Rice
  • 1 cup Long-grain White Rice, rinsed or brown rice (adjust cooking time)
  • 2 cups Low-sodium Chicken Broth or vegetable broth for vegetarian
  • 1 can (14.5 ounces) Diced Tomatoes, undrained or fresh diced tomatoes
For Flavor
  • 1 teaspoon Paprika or smoked paprika
  • 1 teaspoon Italian Seasoning or dried oregano/herbes de Provence
  • 1/4 teaspoon Red Pepper Flakes optional
  • 1/2 teaspoon Kosher Salt plus more to taste
  • 1/4 teaspoon Ground Black Pepper to taste
For Garnish
  • 2 tablespoons Fresh Parsley or Green Onions or cilantro

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering.
  2. Add sliced smoked sausage and cook until browned, about 3 to 4 minutes.
  3. Incorporate diced yellow onion and red bell pepper. Cook until softened, about 4 to 5 minutes.
  4. Stir in minced garlic, paprika, Italian seasoning, and red pepper flakes. Sauté for around 30 seconds.
  5. Add 1 cup of rinsed long-grain white rice, stirring for 30 to 60 seconds.
  6. Pour in 2 cups of chicken broth and undrained diced tomatoes, and bring to a boil.
  7. Once boiling, reduce heat to low, cover, and let simmer for 15 to 18 minutes.
  8. Remove from heat and let rest for 5 minutes, then fluff rice with a fork, adding salt and pepper.
  9. Serve warm, garnished with fresh parsley or green onions.
