  • 1 cup Cherry Tomatoes halved
  • 1/4 cup Red Onion finely chopped
  • 1/4 cup Cilantro chopped
  • 1 medium Avocado diced
  • 1 small Jalapeño finely chopped, omit if preferred milder
For the Dressing
  • 1/4 cup Lime Juice freshly squeezed
  • 1 tablespoon Olive Oil
  • 1 clove Garlic minced
  • 1 tablespoon Maple Syrup or any liquid sweetener

Step-by-Step Instructions
  1. Rinse and drain canned chickpeas and black beans. In a mixing bowl, combine chickpeas, black beans, corn, tomatoes, onion, and cilantro.
