  • 2 cups strawberries Fresh and ripe
  • 2 medium avocados Perfectly ripe
  • 4 stalks green onions Use both white and green parts
  • 1 tablespoon poppy seeds Can substitute with sesame seeds
For the Dressing
  • 1/2 cup balsamic vinaigrette Adjust to taste

Method
 

Cooking and Mixing
  1. Boil pasta in salted water according to package instructions until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, combine cooled pasta with baby spinach, strawberries, avocados, green onions, and poppy seeds. Toss gently.
  3. Drizzle balsamic vinaigrette over salad and toss to coat the ingredients evenly.
  4. Cover and refrigerate for at least one hour to allow flavors to meld.
  5. Serve with a final toss and garnish with mint leaves.
