Cooking Instructions
  1. In a large non-stick skillet, heat 2 tablespoons of olive oil over medium heat. Add diced zucchini, yellow squash, and red onion, sautéing for 5-7 minutes until they soften.
  2. Sprinkle in salt, pepper, and garlic powder over the sautéed vegetables. Stir for about 2-3 minutes until veggies are tender yet slightly crisp.
  3. Gently place cod fillets in the skillet, seasoning with lemon pepper. Cook for 4-5 minutes per side until opaque and flakes easily.
  4. In a separate bowl, blend roasted red peppers, minced garlic, fresh basil, heavy cream, and grated Parmigiano-Reggiano until smooth.
  5. Pour the creamy roasted red pepper sauce over the cooked cod and sautéed vegetables. Stir gently and simmer for 3-4 minutes.
  6. Remove from heat, garnish with freshly chopped parsley, and serve hot alongside a salad or steamed vegetables.
