- Preheat your grill to medium-high, around 375°F to 400°F (190°C to 204°C).
- In a small bowl, combine cumin, chili powder, garlic powder, salt, and pepper.
- Drizzle olive oil over the chicken breasts and rub it in to coat evenly.
- Generously sprinkle the spice mixture onto the chicken.
- Once your grill is hot, place the chicken on the grill grates and grill for 6-8 minutes on one side.
- In the last 2 minutes of grilling, spoon salsa verde over each chicken piece and top with slices of pepper jack cheese.
- Carefully remove the chicken from the grill and let it rest for a few minutes before serving.
