  1. Begin by cooking yakisoba noodles according to package instructions. Drain and rinse with cold water before setting aside.
  2. Whisk together oyster sauce, ketchup, soy sauce, and brown sugar in a small bowl. Set aside.
  3. Heat peanut oil in a large wok or skillet over medium-high heat until shimmering.
  4. Add cubed chicken and stir-fry for about 5-7 minutes until golden brown and cooked through.
  5. Stir in sliced onion, julienned carrot, and sliced shiitake mushrooms. Stir-fry for about 3-4 minutes.
