- Heat 1 tablespoon of sesame oil in a large pot over medium heat. Add 2 cloves of minced garlic and 1 tablespoon of minced ginger, stirring for about 1 minute until fragrant.
- Pour in 6 cups of vegetable or chicken broth and 3 tablespoons of soy sauce, and stir. Optionally, add 1 tablespoon of rice vinegar and let simmer for 5-10 minutes.
- Gently nestle 12 to 16 frozen potstickers into the broth and cook for 5-7 minutes until heated through.
- In the last 3 minutes of cooking, add 1 cup of sliced mushrooms and 2 cups of spinach or bok choy, stirring gently.
- Taste and adjust seasoning with salt and pepper. Ladle into bowls and garnish with chopped green onions and a drizzle of sesame oil.
