Ingredients

For the Beef Mixture
  • 1 pound Ground Beef Opt for leaner cuts to reduce grease.
  • 1 cup Beef Broth Vegetable broth can be used for a lighter version.
  • 1 tablespoon Cornstarch Can substitute with flour if needed.
  • 1/4 cup Ketchup BBQ sauce can be a fun alternative.
  • 1 tablespoon Worcestershire Sauce Soy sauce is a great alternative.
  • Salt & Pepper to taste
For the Vegetables
  • 2 tablespoons Butter Olive oil is a lighter choice.
  • 1 medium Onion Yellow onions are ideal.
  • 1 cup Peppers Any color bell pepper.
  • 1 cup Mushrooms Can be substituted with extra peppers.
For Serving
  • 4 slices Provolone Cheese Mozzarella can be a milder swap.
  • 4 buns Brioche Buns Hoagie rolls or soft sandwich buns work.

Equipment

  • cast-iron skillet

Method

Cooking Steps
  1. Heat a cast iron skillet over medium-high heat. Add ground beef and cook until it's half browned, about 4–5 minutes, then stir to develop a flavorful crust. Once fully browned, about 6–7 additional minutes, remove the beef from the skillet and set it aside.
  2. In the same skillet, melt 2 tablespoons of butter over medium heat. Add diced onions, bell peppers, and mushrooms, then let them sauté undisturbed for 3–4 minutes. Stir occasionally until they soften further, about an additional 2–3 minutes.
  3. Return the cooked ground beef to the skillet with the sautéed vegetables. Whisk together 1 cup of beef broth and 1 tablespoon of cornstarch, then pour this mixture into the skillet along with ¼ cup of ketchup, 1 tablespoon of Worcestershire sauce, and season with salt and pepper. Stir everything together.
  4. Lower the heat and let the mixture simmer for 3–5 minutes until thickened. Stir occasionally.
  5. Stir in chopped provolone cheese and mix until melted into the filling.
  6. Toast brioche buns lightly, then spoon cheesy beef filling onto each bun. Serve immediately.
