Chimichurri Preparation
- Finely chop parsley, garlic, and Fresno pepper. Combine with dried oregano, salt, and pepper in a medium bowl.
- Pour in extra virgin olive oil and red wine vinegar. Stir well and let sit at room temperature for at least 1 hour.
Shrimp Preparation
- Peel and devein shrimp. Toss shrimp with olive oil, minced garlic, honey, smoked paprika, salt, and pepper. Let marinate for 20 minutes.
- Heat a skillet over high heat for 2-3 minutes until hot.
- Cook shrimp in a single layer for 2-3 minutes on one side, flip and cook for another 2-3 minutes.
- Transfer cooked shrimp to a serving dish and spoon chimichurri sauce over shrimp.
