Ingredients
  

For the Chimichurri Sauce
  • 1 bunch fresh parsley use vibrant, green leaves
  • 2-3 cloves garlic opt for fresh, not jarred
  • 1 medium Fresno pepper provides mild heat
  • 1 teaspoon dried oregano for convenience
  • 0.5 cup extra virgin olive oil forms base of chimichurri
  • 0.25 cup red wine vinegar can substitute with white wine vinegar
  • to taste salt adjust to taste
  • to taste pepper adjust to taste
For the Shrimp
  • 1 pound jumbo shrimp peeled and deveined
  • 2 tablespoons olive oil for marinating shrimp
  • 1 clove minced garlic
  • 1 tablespoon honey mild like Clover is preferred
  • 1 teaspoon smoked paprika adds sweet, smoky flavor
  • to taste salt adjust to taste
  • to taste pepper adjust to taste

Method
 

Chimichurri Preparation
  1. Finely chop parsley, garlic, and Fresno pepper. Combine with dried oregano, salt, and pepper in a medium bowl.
  2. Pour in extra virgin olive oil and red wine vinegar. Stir well and let sit at room temperature for at least 1 hour.
Shrimp Preparation
  1. Peel and devein shrimp. Toss shrimp with olive oil, minced garlic, honey, smoked paprika, salt, and pepper. Let marinate for 20 minutes.
  2. Heat a skillet over high heat for 2-3 minutes until hot.
  3. Cook shrimp in a single layer for 2-3 minutes on one side, flip and cook for another 2-3 minutes.
  4. Transfer cooked shrimp to a serving dish and spoon chimichurri sauce over shrimp.
