Method
 

Step-by-Step Instructions
  1. Remove the beef roast from the refrigerator and let it sit at room temperature for about 30 minutes. Preheat your oven to 375°F (190°C).
  2. Generously rub the beef roast with kosher salt, freshly ground black pepper, and minced garlic.
  3. Heat olive oil in a skillet over medium-high heat until shimmering. Sear each side of the roast for about 3-4 minutes until golden crust forms.
  4. Transfer the seared roast to a roasting pan and place it in the preheated oven. Cook for about 20 minutes per pound until the internal temperature reaches 130°F (54°C).
  5. Once done, remove the roast from the oven and let it rest on a cutting board for 15-20 minutes.
  6. Slice the roast beef against the grain, serve it with your favorite sides.
