- Remove the beef roast from the refrigerator and let it sit at room temperature for about 30 minutes. Preheat your oven to 375°F (190°C).
- Generously rub the beef roast with kosher salt, freshly ground black pepper, and minced garlic.
- Heat olive oil in a skillet over medium-high heat until shimmering. Sear each side of the roast for about 3-4 minutes until golden crust forms.
- Transfer the seared roast to a roasting pan and place it in the preheated oven. Cook for about 20 minutes per pound until the internal temperature reaches 130°F (54°C).
