  • 4 cups Mixed Greens Any salad mix or spinach can substitute.
  • 1 medium Avocado Sliced; mayonnaise can be a substitute.
  • 1 cup Tomatoes Any variety, such as cherry or Roma.
  • Additional Lime & Salt To taste.

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground chicken, green onions, bell pepper, cilantro, garlic, lime juice, kosher salt, and red pepper flakes. Mix thoroughly until combined.
  2. Wet your hands to prevent sticking and divide the mixture into four equal portions. Shape into patties, about ¾-inch thick.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat for 2-3 minutes until shimmering.
  4. Place the patties in the skillet without overcrowding. Sear for 2.5 minutes on one side, then flip and cook for another 2.5 minutes or until they reach 165°F.
  5. In a separate bowl, prepare the salad by tossing mixed greens with olive oil, lime juice, and salt until lightly coated.
  6. Once the patties are cooked, let them rest for a minute. Serve on a bed of mixed greens topped with the patties, avocado, and tomatoes.
