- Heat 2 tablespoons of olive oil in a large non-stick pan or wok over medium heat for 1-2 minutes until shimmering.

- Add 14 ounces of pressed and diced extra-firm tofu, and stir-fry for an additional 5 minutes to brown slightly.
- Stir in 2 cups of chopped baby bok choy, cooking until the greens start to wilt, about 2 minutes.
- Pour in 3 tablespoons of soy sauce, 1 tablespoon of balsamic vinegar, and ground black pepper. Cook for an additional minute.
- Off the heat, drizzle in 1 tablespoon of sesame oil and toss in 1 tablespoon of sesame seeds. Serve hot.
