  • 14 ounces Extra Firm Tofu, pressed and diced Firm tofu works if that’s what you have on hand.
  • 2 cups Baby Bok Choy or Choy Sum, chopped Feel free to swap with spinach or kale if needed.
  • 3 tablespoons Soy Sauce Opt for low-sodium or tamari for a gluten-free version.
  • 1 tablespoon Balsamic or Black Rice Vinegar Apple cider vinegar can be a good alternative.
  • to taste Ground Black Pepper White pepper can introduce a different flavor profile.
  • 1 tablespoon Sesame Oil Substitute with another nut oil if necessary.
  • 1 tablespoon Sesame Seeds Chopped nuts work well as a substitute for texture.

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large non-stick pan or wok over medium heat for 1-2 minutes until shimmering.
  2. Add 2 cloves of minced garlic, sauté for about 30 seconds until fragrant and lightly golden.
  3. Incorporate 8 ounces of sliced shiitake or brown mushrooms, cooking for about 3-5 minutes until tender.
  4. Add 14 ounces of pressed and diced extra-firm tofu, and stir-fry for an additional 5 minutes to brown slightly.
  5. Stir in 2 cups of chopped baby bok choy, cooking until the greens start to wilt, about 2 minutes.
  6. Pour in 3 tablespoons of soy sauce, 1 tablespoon of balsamic vinegar, and ground black pepper. Cook for an additional minute.
  7. Off the heat, drizzle in 1 tablespoon of sesame oil and toss in 1 tablespoon of sesame seeds. Serve hot.

Notes
