Ingredients
  

For the Kofta
  • 1 pound Ground Beef (80/20) or swap with lamb or turkey
  • 2 teaspoons Za'atar Seasoning or replace with thyme, oregano, and sesame seeds
  • 1 teaspoon Kosher Salt adjust if using table salt
  • ½ teaspoon Ground Black Pepper or substitute with white pepper
  • 1 teaspoon Cumin or use coriander
  • 1 medium Shallot (minced) or substitute with mild onion
  • ¼ cup Fresh Italian Parsley or Cilantro (chopped) or use mint or dill
  • 1 large Egg (beaten) for vegan version, use ground flaxseed mixed with water
For the Greek Yogurt Sauce
  • 1 cup Plain Greek Yogurt can replace with regular yogurt for a lighter version
  • 2 tablespoons Extra Virgin Olive Oil recommended for health benefits
  • 1 clove Garlic Clove (minced) fresh is best; garlic powder can work in a pinch
  • 1 tablespoon Fresh Lemon Juice vinegar can be used if unavailable
  • 1 teaspoon Cayenne Pepper (optional) skip for milder flavor

Method
 

Prepare Greek Yogurt Sauce
  1. In a mixing bowl, combine Greek yogurt, olive oil, minced garlic, lemon juice, cumin, kosher salt, and ground black pepper. Stir until smooth.
Make Beef Kofta
  1. In a large mixing bowl, combine ground beef, za'atar seasoning, kosher salt, ground black pepper, minced shallot, chopped parsley, minced garlic, and beaten egg. Mix gently until just combined.
Form Kofta
  1. Lightly oil hands and shape the beef mixture into elongated patties, about 3-4 inches long and 1-inch thick.
Cook Kofta
  1. Heat a skillet over medium-high heat and add olive oil. Add kofta patties and cook for 12-14 minutes, flipping occasionally until browned and cooked to an internal temperature of 160°F.
Serve
  1. Transfer cooked kofta to a plate and drizzle with Greek yogurt sauce. Serve warm with pita bread, fresh vegetables, or salad.
