Ingredients
  

For the Noodles
  • 1 package Chow Mein Egg Noodles Hong Kong style preferred
For the Aromatics
  • 1 medium Yellow Onion can substitute with white onion
  • 2 stalks Green Onions use both white and green parts
For the Vegetables
  • 1 cup Bean Sprouts can substitute with carrots or bell peppers
For Cooking
  • 2 tablespoons Corn Oil can substitute with canola or vegetable oil
  • 1 tablespoon Sesame Oil toasted sesame oil recommended
For the Sauce
  • 2 tablespoons Dark Soy Sauce for authentic taste
  • 2 tablespoons Regular Soy Sauce can use low-sodium
  • 1 tablespoon Oyster Sauce or vegetarian alternative
  • 1 teaspoon Fish Sauce optional for umami flavor
  • 1 teaspoon Granulated Sugar can substitute with honey or agave
  • 2 tablespoons Water for sauce consistency

Method
 

Cooking Steps
  1. Bring a pot of water to a rolling boil. Soak chow mein egg noodles for 30 seconds to 1 minute. Drain and set aside.
  2. In a bowl, combine dark soy sauce, regular soy sauce, oyster sauce, fish sauce, granulated sugar, and water. Whisk until dissolved.
  3. Heat 1 tablespoon of corn oil in a wok. Sauté sliced yellow onions and the white parts of green onions for about 1 minute.
  4. Add another tablespoon of corn oil, spread soaked noodles in the wok and pan-fry for about 2 minutes. Flip and cook for another 2 minutes.
  5. Return sautéed onions to the wok. Add bean sprouts and the prepared sauce, toss gently and cook for another 1-2 minutes.
  6. Remove from heat, drizzle in sesame oil, and toss to combine. Serve hot garnished with green onion tips.
