Cooking Steps
- Bring a pot of water to a rolling boil. Soak chow mein egg noodles for 30 seconds to 1 minute. Drain and set aside.
- In a bowl, combine dark soy sauce, regular soy sauce, oyster sauce, fish sauce, granulated sugar, and water. Whisk until dissolved.
- Heat 1 tablespoon of corn oil in a wok. Sauté sliced yellow onions and the white parts of green onions for about 1 minute.
- Add another tablespoon of corn oil, spread soaked noodles in the wok and pan-fry for about 2 minutes. Flip and cook for another 2 minutes.
- Return sautéed onions to the wok. Add bean sprouts and the prepared sauce, toss gently and cook for another 1-2 minutes.
- Remove from heat, drizzle in sesame oil, and toss to combine. Serve hot garnished with green onion tips.
