  • 2 stalks Celery Finely diced
  • 1 each Lemon Zest Use lime as a substitute
  • 1 tablespoon Lemon Juice
  • 1/4 cup Parmesan Cheese Or nutritional yeast
For the Wrap
  • 4 each Soft Tortilla Wraps Or low-carb tortillas or lettuce leaves

Method
 

Step-by-Step Instructions
  1. Prep all ingredients by dicing the chicken, chopping celery, spring onions, and grating the carrot. Zest and juice the lemon.
  2. In a mixing bowl, combine chicken, celery, spring onions, yogurt, mayonnaise, mustard, carrot, spinach, sun-dried tomatoes, lemon zest, juice, and parmesan. Stir until evenly mixed.
  3. Scoop 1 to 1.5 cups of the mixture onto a tortilla and roll tightly, tucking in the sides.
  4. Optionally, toast wraps in a skillet for 2-3 minutes on each side until golden.
  5. Slice wraps in half and serve immediately, or store in an airtight container for up to 3 days.
