Method
 

Step-by-Step Instructions
  1. Soak the dry brown lentils in hot water for 10-15 minutes, then drain.
  2. Heat 2 tablespoons of olive oil in a large pot over medium heat for 1-2 minutes.
  3. Sauté the chopped onion for 3-4 minutes until tender and translucent.
  4. Add minced garlic, turmeric, ground cumin, Italian seasoning, salt, and black pepper, sauté for 1-2 minutes.
  5. Pour in 3 cups of boiling water, stir, and bring to a rolling boil (about 3-4 minutes).
  6. Stir in the drained lentils, reduce heat to low, cover, and simmer for 15-20 minutes.
  7. Check for tenderness and adjust seasoning, adding vinegar for brightness if desired.
  8. Serve warm, garnished with fresh cilantro.
