  • 1 teaspoon Salt Using kosher salt or sea salt can enhance results.
  • 1 teaspoon Pepper
For the Vegetables
  • 1 medium Onion, diced Use yellow, white, or red onion, or substitute with shallots.
  • 1 medium Yellow Bell Pepper Green bell peppers can be used, or removed for low FODMAP choices.
  • 3 cups Sweet Potatoes, peeled and diced Yukon gold or butternut squash are good substitutes.
For Cooking and Garnishing
  • 0.5 cup Water Chicken or vegetable broth can add extra flavor.
  • 1 cup Mozzarella, shredded A dairy-free cheese can be used if needed.
  • 0.25 cup Fresh Cilantro, chopped Parsley can be a suitable alternative if cilantro isn’t preferred.

Step‑by‑Step Instructions
  1. Heat a large cast iron skillet over medium-high heat. Add a tablespoon of olive oil, swirling it to coat the bottom.
  2. Add minced garlic and sauté for 1 minute until fragrant. Introduce ground turkey and cook for about 8 minutes until browned.
  3. Sprinkle ground cumin, chili powder, salt, and pepper. Stir well and cook for an additional 2 minutes.
  4. Add diced onion and yellow bell pepper. Sauté for 3-4 minutes until the onion is translucent.
  5. Add sweet potatoes and water to the skillet, stir, and cover. Cook for 6-8 minutes until the sweet potatoes are tender.
  6. Remove lid, adjust seasonings if needed, sprinkle mozzarella on top, cover for 2 minutes to melt cheese, and garnish with cilantro.
