Ingredients

For the Hash
  • 1 lb Chicken Tenders Substitute with diced chicken breast or thighs if preferred.
  • 4 slices Bacon Can be replaced with turkey bacon for a healthier version.
  • 2 medium Carrots Parsnips can be used for a similar texture if desired.
  • 1 cup Celery Root Can be substituted with potatoes or more carrots.
  • 1 medium Onion Any onion variety works, shallots are a good substitute.
  • 2 cloves Garlic Fresh garlic is best, but garlic powder will suffice.
For Cooking
  • 2 tablespoons Cooking Fat Olive oil or ghee are good options; coconut oil adds a twist.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Pepper Adjust to taste.

Equipment

  • Skillet

Method

Step-by-Step Instructions
  1. Begin by chopping the chicken, bacon, carrots, celery root, onion, and garlic into uniform, bite-sized pieces.
  2. In a large skillet, heat over medium heat and add the diced bacon. Cook until crispy, about 5-7 minutes, then transfer to paper towels, leaving the fat in the skillet.
  3. Add the chopped chicken to the skillet, season with salt and pepper, and cook for about 5-7 minutes until browned and cooked through, reaching an internal temperature of 165°F.
  4. Stir in the chopped onion, carrots, and celery root into the skillet with the chicken. Sauté until tender and onions are translucent, about 8-10 minutes.
  5. Return the cooked bacon to the skillet and stir gently. Cook for an additional 2-3 minutes to meld flavors, tasting and adjusting seasonings as desired.
  6. Plate the Harvest Chicken Hash warm, garnished with fresh herbs if desired, and serve with avocado or a salad.
