Method
 

Preparation
  1. In a medium bowl, whisk together the marinade ingredients until well combined and fragrant.
  2. Place cleaned mushrooms in a resealable bag or shallow dish, pour the marinade over, seal or cover, and refrigerate for at least 30 minutes.
  3. If using wooden skewers, soak them in water for at least 30 minutes before grilling. Preheat the grill to medium-high heat.
  4. Remove marinated mushrooms from the fridge and thread them onto the soaked skewers, alternating with colorful vegetables.
  5. Grill the skewers for 10-12 minutes, turning occasionally. Brush with leftover marinade for added flavor.
  6. Let the skewers rest for a few minutes after grilling, then serve warm.
