Ingredients

For the Meatloaf
  • 1 tablespoon Olive Oil Adds moisture and flavor; substitute with vegetable oil if necessary.
  • 80 grams Onion Finely diced; can substitute with shallots for a milder flavor.
  • 2 cloves Garlic Minced; garlic powder works in a pinch.
  • 900 grams Ground Chicken The main protein; ground turkey or lean beef are alternatives.
  • 60 grams Seasoned Breadcrumbs Plain breadcrumbs with Italian herbs can be used.
  • 2 teaspoons Milk Keeps the meatloaf moist; chicken broth can serve as a non-dairy substitute.
  • 30 grams Parmesan Cheese Add richness; substitute with Pecorino Romano for a twist.
  • 1 piece Egg Essential for binding; a flax seed or chia seed mixture works for a vegan option.
  • 2 tablespoons Fresh Parsley Provides freshness; substitute with basil or oregano if desired.
  • 1 teaspoon Italian Seasoning A blend of herbs to enhance flavor; mix dried oregano and basil as an alternative.
  • ½ teaspoon Salt Enhances overall flavor; adjust according to dietary preferences.
  • 3 strings Mozzarella Cheese Cut into 1cm slices; shredded mozzarella is a suitable alternative.
  • 120 ml Marinara Sauce Adds moisture and flavor on top; store-bought or homemade works.
  • 2 tablespoons Panko Breadcrumbs Creates a crunchy topping; regular breadcrumbs can be used.

Method

Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F) and line a baking sheet with foil, spraying lightly with cooking spray.
  2. In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the onion and garlic for about 5 minutes until translucent.
  3. In a large mixing bowl, combine ground chicken, cooled onion and garlic, breadcrumbs, milk, Parmesan, egg, parsley, Italian seasoning, and salt. Mix gently.
  4. Spread two-thirds of the meat mixture on the baking sheet, lay mozzarella slices in the center, and top with remaining meat mixture.
  5. Pour marinara sauce over the top and bake for 45 minutes until the internal temperature reaches at least 74°C (165°F).
  6. Prepare the topping by mixing panko breadcrumbs, melted butter, Parmesan, and parsley. Sprinkle shredded mozzarella and panko mixture on top after initial baking.
  7. Return the meatloaf to the oven for an additional 15-20 minutes until the topping is golden brown and bubbling.
  8. Let the meatloaf rest for about 10 minutes before slicing and serving.
