Preparation Steps
  1. Gently rinse the portobello mushrooms under cool water and pat dry. Place tops-up in a shallow dish.
  2. In a mixing bowl, whisk together balsamic vinegar, coconut aminos, onion powder, garlic powder, paprika, black pepper, and sea salt until glossy.
  3. Pour the marinade over the mushrooms, ensuring it coats evenly. Let marinate for 10 minutes, then flip and marinate for another 10 minutes.
  4. Preheat your grill or grill pan over medium-high heat for about 5 minutes.
  5. Place the marinated mushrooms onto the grill and cook for about 5 minutes on each side, brushing with leftover marinade halfway through.
  6. Assemble the burgers by laying lettuce on the bottom half of the bun, adding the grilled mushroom, a slice of tomato, and a slice of onion. Spread vegan mayo on the top bun.
  7. Serve immediately with sides like sweet potato fries or salad.
