- Preheat your oven to 450°F (232°C). Gather your 9x13-inch casserole dish.
- In the prepared casserole dish, combine the rinsed quinoa, frozen peppers and onions, pinto beans, and black beans.
- Pour in the red enchilada sauce, mixing everything together until well blended.
- Bring 1 cup of vegetable broth to a boil in a small saucepan and pour it over the quinoa mixture. Stir gently to combine.
- Cover the casserole dish tightly with aluminum foil and bake for 35 minutes.
- After baking, remove the casserole from the oven and fluff the quinoa mixture gently with a fork.
- Sprinkle 1 cup of Mexican blend shredded cheese over the top and bake uncovered for an additional 10–12 minutes, until the cheese is melted and bubbly.
- Remove from the oven, let it rest for a few minutes, and garnish with cilantro, slices of avocado, or jalapeños before serving.
