Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss cherry tomatoes and whole garlic cloves with olive oil, salt, and pepper, then spread on the baking sheet.
  3. Roast in the oven for 20-30 minutes until tomatoes burst and garlic is golden.
  4. Boil salted water in a large pot, cook pasta until al dente, and reserve some pasta water.
  5. In a skillet, combine roasted tomatoes and garlic with ricotta, mashing garlic and mixing well.
  6. Add cooked pasta and splash of reserved pasta water, stirring until sauce forms.
  7. Remove from heat, fold in fresh basil and lemon zest, then serve hot.
