- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the diced boneless, skinless chicken breasts to the skillet and sauté for 5 to 7 minutes until golden brown.
- Stir in 1 diced onion, 2 minced garlic cloves, and 1 chopped bell pepper. Sauté for 3-4 minutes until translucent.
- Incorporate 1 can of rinsed black beans, 1 teaspoon of cumin, and 1 teaspoon of chili powder. Stir well and cook for 5 more minutes.
- Taste and adjust the seasoning. Garnish with freshly chopped cilantro and serve with lime wedges.
- Serve warm with tortillas or a side of rice.
