Ingredients
  

For the Skillet
  • 1 lb Boneless, Skinless Chicken Breasts diced
  • 1 cup Bell Peppers chopped (any color)
  • 1 can Black Beans rinsed
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 tablespoon Cilantro chopped, for garnish
  • 1 each Lime cut into wedges
For Serving
  • 4 each Tortillas or Rice

Method
 

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the diced boneless, skinless chicken breasts to the skillet and sauté for 5 to 7 minutes until golden brown.
  3. Stir in 1 diced onion, 2 minced garlic cloves, and 1 chopped bell pepper. Sauté for 3-4 minutes until translucent.
  4. Incorporate 1 can of rinsed black beans, 1 teaspoon of cumin, and 1 teaspoon of chili powder. Stir well and cook for 5 more minutes.
  5. Taste and adjust the seasoning. Garnish with freshly chopped cilantro and serve with lime wedges.
  6. Serve warm with tortillas or a side of rice.
