Step-by-Step Instructions
  1. In a mixing bowl, combine chicken thighs with soy sauce, dark soy sauce, oyster sauce, black pepper, and corn starch. Allow it to marinate for about 10 minutes.
  2. Place a non-stick pan on medium-high heat. Add enough oil to cover the bottom and let it get hot.
  3. Pan-fry the chicken for about 10 minutes, turning occasionally until golden brown and cooked through.
  4. Add the white parts of the scallions to the pan after the chicken is cooked. Cook for about 2-3 minutes until the scallions soften.
  5. Sprinkle in the green parts of the scallions, and stir for an extra 10-20 seconds before serving.
  6. Serve hot over a bed of rice or noodles, garnishing with additional scallions or a dash of pepper.
