Step-by-Step Instructions
  1. Cook soba noodles in boiling water according to package instructions, about 4-5 minutes. Drain and rinse under cold water.
  2. In a small bowl, combine tamari, chili paste, and rice vinegar; whisk and set aside.
  3. Sauté garlic and ginger in sesame oil for 30 seconds, then add bell pepper and carrot; cook for 5-7 minutes until softened.
  4. Add bok choy and stir until wilted. It should maintain vibrant colors.
  5. Combine cooked noodles with veggies and sauce, tossing for 1-2 minutes until heated throughout and well mixed.
  6. Serve warm, garnished with green onions, sesame seeds, and red pepper flakes.
