Cooking Steps
- Place the chicken thighs or breasts at the bottom of the slow cooker. Layer thinly sliced onions on top.
- In a small mixing bowl, whisk together chicken broth, lemon juice, minced garlic, olive oil, oregano, thyme, salt, and black pepper. Pour over the chicken and onions.
- Cover the slow cooker and set to LOW for 5-6 hours or HIGH for 3-4 hours, until chicken reaches an internal temperature of 165°F.
- Shred the chicken in the slow cooker using two forks.
- Serve shredded chicken over rice, in pita bread, or atop a salad.
