For the Seasoning

Cooking Steps
  1. Place the chicken thighs or breasts at the bottom of the slow cooker. Layer thinly sliced onions on top.
  2. In a small mixing bowl, whisk together chicken broth, lemon juice, minced garlic, olive oil, oregano, thyme, salt, and black pepper. Pour over the chicken and onions.
  3. Cover the slow cooker and set to LOW for 5-6 hours or HIGH for 3-4 hours, until chicken reaches an internal temperature of 165°F.
  4. Shred the chicken in the slow cooker using two forks.
  5. Serve shredded chicken over rice, in pita bread, or atop a salad.
