Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the all-purpose flour, chives, thyme, rosemary, salt, and black pepper.
  3. Using a food processor, pulse the cold unsalted butter with the grated Parmesan until the texture resembles coarse crumbs.
  4. Add the flour mixture from Step 2 to the food processor and pulse until combined. Gradually add cold water and pulse until the dough comes together.
  5. Lightly knead the dough on a floured surface until smooth, shape into a disc, wrap in plastic wrap, and refrigerate for 1 hour.
  6. Once chilled, roll the dough out to about 1/4 inch thick and cut out 2 1/2-inch rounds.
  7. Bake the cookies in the preheated oven for 18-22 minutes until golden brown. Allow to cool completely on a wire rack.
  8. Preheat the broiler and arrange half of the cooled cookies on a baking sheet. Top with a slice of prosciutto and a cube of brie. Broil for 30 seconds to 1 minute.
  9. Drizzle with honey and top each with the remaining cookies to assemble your Savory S’mores. Serve immediately.
