  1. Preheat your oven to 275°F (135°C). Cut sourdough bread into cubes, spread on a baking sheet, and bake for about 30 minutes.
  2. In a large skillet, heat avocado oil over medium heat. Add onions, shallots, and celery. Sauté for about 10 minutes until softened, then add garlic for another minute.
  3. In a large mixing bowl, combine dried bread and sautéed vegetables, gently folding to absorb flavors.
