Step-by-Step Instructions for Spinach Feta Breakfast Casserole
  1. Preheat your oven to 350°F (175°C).
  2. Spray a 9x13-inch baking dish with non-stick cooking spray and layer half of the frozen Potatoes O’Brien.
  3. In a large skillet, heat 1 tablespoon of olive oil and sauté the fresh baby spinach for 3-5 minutes.
  4. In a mixing bowl, whisk together the eggs, 1 cup of whole milk, and desired seasonings.
  5. Distribute the sautéed spinach over the layer of Potatoes O’Brien and pour the egg mixture over it.
  6. Sprinkle crumbled feta cheese over the top of the casserole.
  7. Bake for about 40 minutes until the eggs are fully set and the top is golden-brown.
