For the Teriyaki Sauce
  • 1/2 cup low sodium soy sauce or coconut aminos for gluten-free
  • 1/2 cup water to dilute the sauce
  • 1/4 cup light brown sugar or honey/agave syrup as alternatives
  • 2 tablespoons rice vinegar or white vinegar as a substitute
  • 1 tablespoon sesame oil optional
  • 1 teaspoon ground ginger or fresh ginger for a deeper flavor
  • 2 cloves minced garlic or garlic powder as a substitute
  • 1 tablespoon cornstarch or arrowroot powder as alternative
For Serving
  • 4 cups rice white or brown, or substitute with noodles
  • 2 cups steamed veggies frozen mixed vegetables or steamed broccoli
  • sesame seeds for garnish
  • chopped green onions for garnish

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
  2. Add 1 pound of cubed boneless, skinless chicken breasts to the skillet and sauté for 5-7 minutes until browned.
  3. While the chicken cooks, whisk together ½ cup of low sodium soy sauce, ½ cup of water, ¼ cup of light brown sugar, 2 tablespoons of rice vinegar, 1 tablespoon of sesame oil, 1 teaspoon of ground ginger, 2 minced garlic cloves, and 1 tablespoon of cornstarch in a bowl until smooth.
  4. Pour the prepared teriyaki sauce over the cooked chicken and let simmer for 3-5 minutes until thickened.
  5. Prepare your rice, then serve it in bowls topped with the teriyaki chicken, steamed veggies, sesame seeds, and chopped green onions.
