  • 1 teaspoon Cinnamon For flavor

  • 1 teaspoon Vanilla Extract Or maple extract
For the Topping
  • 1 cup Mini Marshmallows Optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with butter.
  2. Peel and thinly slice the sweet potatoes into ⅛ inch rounds and arrange them in the baking dish.
  3. In a medium saucepan, melt the butter over medium heat, then add brown sugar, heavy cream, cinnamon, nutmeg, salt, and vanilla extract; stir until smooth.
  4. Pour the brown sugar sauce over the sweet potatoes, pressing them down gently.
  5. Cover the dish with aluminum foil and bake for 35 minutes.
  6. Remove the foil and continue baking for 20-25 minutes until tender and bubbling.
  7. If using, sprinkle mini marshmallows on top and bake for the last 5 minutes.
  8. Let it cool for a few minutes before serving to allow flavors to meld.
