For the Salad
  • 1 can Chickpeas Drain and rinse well.
  • 1 cup Cherry Tomatoes Halved, any chopped tomato variety works.

  • 1 large Cucumber Can substitute with zucchini.

For the Dressing

Method
 

Preparation Steps
  1. Preheat your grill or grill pan over medium-high heat for about 5 minutes.
  2. In a bowl, whisk together sesame oil, soy sauce, honey, salt, and pepper. Add chicken, coat well, and marinate for at least 10 minutes.
  3. Grill marinated chicken for 6-7 minutes on each side until cooked through. Rest for 5 minutes before slicing.
  4. Combine drained chickpeas, cherry tomatoes, salad greens, cucumber, and red onion in a salad bowl. Toss gently.
  5. In a small bowl, whisk together olive oil, vinegar, ginger, garlic, and salt. Drizzle dressing over salad and toss.
  6. Top salad with sliced chicken and sprinkle with toasted sesame seeds. Serve immediately.
