Preparation Steps
- Preheat your grill or grill pan over medium-high heat for about 5 minutes.
- In a bowl, whisk together sesame oil, soy sauce, honey, salt, and pepper. Add chicken, coat well, and marinate for at least 10 minutes.
- Grill marinated chicken for 6-7 minutes on each side until cooked through. Rest for 5 minutes before slicing.
- Combine drained chickpeas, cherry tomatoes, salad greens, cucumber, and red onion in a salad bowl. Toss gently.
- In a small bowl, whisk together olive oil, vinegar, ginger, garlic, and salt. Drizzle dressing over salad and toss.
- Top salad with sliced chicken and sprinkle with toasted sesame seeds. Serve immediately.
