Step-by-Step Instructions for Smash Burgers On Grill
  1. Preheat your grill or griddle to 450°F for 5 to 15 minutes.
  2. Combine mayo, mustard, ketchup, pickle juice, and chopped pickles in a bowl for the sauce. Refrigerate.
  3. Mix the ground beef with garlic powder, smoked paprika, seasoning salt, Worcestershire sauce, and black pepper in a bowl.
  4. Divide the meat mixture into eight 4-ounce portions and roll into balls.
  5. Place each meatball on the grill and smash with a spatula into 1/2-inch thick patties. Cook for 3 to 5 minutes.
  6. Monitor patties for browning on edges and juices surfacing, then flip for perfect doneness.
  7. Cook sautéed onions alongside patties for 3 to 5 minutes, if desired.
  8. Place cheese on each patty after flipping and cover the grill for another 3 to 5 minutes to melt.
  9. Butter the insides of hamburger buns and toast cut side down on the grill for about 30 seconds.
