Step-by-Step Instructions
  1. Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Sear the chicken thighs skin-side down for 4-5 minutes until golden brown.
  3. Remove the chicken and add the diced onion to the skillet. Sauté for about 4 minutes until softened.
  4. Add the orzo and toast it for 3-4 minutes, then add minced garlic and cook for another 1-2 minutes until fragrant.
  5. Pour in chicken broth to deglaze the skillet and bring to a gentle boil. Return the chicken to the pan skin-side up.
  6. Cover and simmer on medium-low heat for about 8 minutes.
  7. Add broccoli florets on top, cover again, and cook for another 12 minutes.
  8. Remove the chicken and stir in the cheddar cheese until melted and creamy.
