  • 1 medium Onion diced
For the Saucy Goodness
  • 1/2 cup Sun-dried tomatoes chopped
  • 3 cup Chicken broth low sodium
  • 1 cup Heavy cream

  • 1 cup Orzo pasta
  • 4 cup Fresh spinach roughly chopped

  • 1/2 cup Parmesan cheese grated

Preparation Steps
  1. Prepare the chicken by placing thawed chicken breasts in your slow cooker. Season with Italian seasoning, red pepper flakes, salt, and pepper.
  2. Add minced garlic and diced onions over the chicken, stirring gently to combine.
  3. Incorporate chopped sun-dried tomatoes on top of the chicken and aromatics.
  4. Pour low-sodium chicken broth over the ingredients and cover the slow cooker. Cook on low for 2-3 hours or high for 1-1.5 hours.
  5. Stir in heavy cream and orzo pasta, cooking on low for an additional 20-30 minutes.
  6. Add fresh spinach and grated Parmesan cheese, gently stirring until the spinach wilts and cheese melts.
  7. Taste and adjust seasonings as needed before serving hot, garnished with extra Parmesan.
