Method
 

Preparation
  1. In a large mixing bowl, combine the ground chuck with diced jalapeños, cubed sharp cheddar, and BBQ rub. Mix gently and let rest for 10 minutes.
  2. Shape the mixture into patties larger than the buns, making an indentation in the center of each.
  3. Preheat smoker to 225°F with hickory wood chunks.
  4. Smoke patties for 60 to 75 minutes, until their internal temperature reaches 160°F.
  5. Whisk together sauce ingredients in a bowl and chill in the refrigerator.
  6. Add cheese to patties in the last 3-5 minutes of cooking to melt.
  7. Toast buns until golden-brown.
  8. Assemble burgers with sauce, patties, and top buns; serve immediately.
