- Preheat your oven to 180°C (350°F) and prepare a baking sheet. Slice the French baguette into 1.5 cm thick pieces and arrange them on the sheet. Brush each side lightly with olive oil for richness. Bake for 8-10 minutes until golden brown, flipping halfway to ensure even crispness.
- While the crostini is toasting, combine the dairy-free cream cheese with your choice of chopped fresh herbs like parsley, dill, and chives in a mixing bowl. Season with salt and pepper to taste. Blend until creamy and smooth.
- Once the baguette slices are perfectly toasted and have cooled slightly, spread a generous layer of the herbed cream cheese on each toast. Place a slice of smoked salmon on top.
- Add dollops of pickled red onion on top of the salmon and optionally sprinkle with extra chopped herbs. Serve immediately on a platter.
