- Preheat your oven to 350°F (177°C) and line your baking sheets with parchment paper.
- In a large mixing bowl, combine the smooth peanut butter, unsalted butter, dark brown sugar, granulated sugar, and vanilla extract. Blend on medium speed for 4-5 minutes until creamy.
- Add the eggs one at a time, mixing well after each addition and scraping the sides of the bowl.
- Incorporate the baking powder, baking soda, and sea salt into the mixture. Gradually add the all-purpose flour, stirring gently until the dough comes together.
- Portion the dough into 2-tablespoon balls, roll in granulated sugar, and place on baking sheets with space between each.
- Bake for 12-13 minutes until soft and slightly underbaked. Allow to slightly deflate by tapping the sheet on the counter.
- Cool for 20 minutes on the baking sheet before transferring to a wire rack.
