For the Filling

For the Glaze

Method
 

Dough Preparation
  1. In a large mixing bowl, combine your bubbly active sourdough starter with warm water, whisking until fully dissolved.
  2. Gradually add salt and unbleached flour, mixing until a shaggy dough forms.
  3. Cover the bowl and let the dough rest for 30 minutes.
Stretch and Folds
  1. After the resting period, perform a set of stretch and folds to strengthen the gluten.
  2. Gently pull one side of the dough up and fold it over itself; repeat for a total of four times.
  3. Cover again and place the bowl to bulk ferment for about 4 hours.
Prepare Baking Dish
  1. Prepare a 9x13 glass baking dish by lining it with parchment paper.
  2. Coat the parchment and the sides of the dish with melted salted butter or avocado cooking spray.
Add Apples
  1. Once the dough has risen, gently fold one-third of your prepared apple mixture into the dough.
  2. Carefully stretch the dough to fit into the baking dish.
  3. Cover the dish with a kitchen towel and allow it to rise again for about 1 hour.
Final Topping and Baking
  1. Preheat your oven to 425°F.
  2. After it’s doubled, create dimples across the surface of the dough.
  3. Sprinkle the remaining apple mixture evenly on top.
  4. Bake for 25-30 minutes, until golden brown and bubbling.
Glaze
  1. Once baked, let it cool in the pan for about 10 minutes.
  2. Prepare your glaze by whisking together powdered sugar and milk until smooth.
  3. Brush the glaze over the warm focaccia before slicing it.
