For the Chicken
  • 2 pieces Chicken Breasts skinless and boneless
  • 1 cup Flour for dredging

  • 2 large Eggs beaten
  • for frying Cooking Oil high smoke point like olive or canola
For the Crunchy Coating
  • 1 cup Panko Breadcrumbs
  • 1 cup Plain Breadcrumbs
  • 1 tablespoon Chili Powder
  • 1 tablespoon Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic Powder
For the Salad
  • 4 cups Spring Mix or spinach/arugula
  • 1 cup Corn fresh, frozen, or canned
  • 1 large Red Pepper
  • 1 large Avocado diced
  • 3 tablespoons Scallions chopped
For the Dressing
  • ½ cup Mayonnaise or vegan mayo
  • ½ cup Sour Cream or Greek yogurt
  • 2 tablespoons Diced Chipotle Peppers in Adobo
  • 2 tablespoons Lime Juice or lemon juice
  • 1 tablespoon Honey or maple syrup
  • ¼ cup Olive Oil to adjust consistency
  • ¼ cup Water to adjust consistency
  • 1 clove Minced Garlic

Preparation Steps
  1. Flatten chicken breasts between plastic wrap and pound to ½ inch thickness.
  2. Set up a breading station with flour, beaten eggs, and breadcrumbs seasoned with spices.
  3. Dredge each chicken piece in flour, then egg, then coat in breadcrumb mixture.
