- Preheat your oven to 400°F (200°C).
- In an oven-proof skillet over medium heat, add the chorizo sausage and cook until it's browned, about 6-8 minutes.
- Remove the chorizo from the skillet and set aside.

- Stir in diced bell peppers, Fresno chili, and minced garlic. Cook for another 3-5 minutes.

- Crack the eggs into the wells and sprinkle with cotija cheese.
- Bake for 5-7 minutes until the eggs are set to your liking.
- Garnish with cilantro and serve hot, optionally with avocado slices.
