  • 4 large Eggs Fresh for best results
  • 1 tbsp Olive Oil Substitute with avocado oil as needed
  • 1 cup Spanish Onion Chopped, shallots can be used
  • 1 cup Bell Pepper Diced, zucchini can be used as a low-carb alternative
  • 1 medium Fresno Chili Swap for jalapeño for milder dish
  • 3 cloves Garlic Minced fresh for maximum flavor
  • 1 can Fire-Roasted Tomatoes Regular diced tomatoes can work too
  • 1 can Mild Green Chilis Diced jalapeños can increase heat
  • 1 tsp Kosher Salt Adjust to taste
  • 1 tsp Black Pepper Adjust to taste
  • 1/2 cup Cotija Cheese Can be omitted for dairy-free
Optional Garnishes
  • 1/4 cup Cilantro Or parsley for different flavor
  • 1 medium Avocado Sliced

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In an oven-proof skillet over medium heat, add the chorizo sausage and cook until it's browned, about 6-8 minutes.
  3. Remove the chorizo from the skillet and set aside.
  4. Add olive oil and the chopped Spanish onion to the skillet, sauté for 3-4 minutes until translucent.
  5. Stir in diced bell peppers, Fresno chili, and minced garlic. Cook for another 3-5 minutes.
  6. Add fire-roasted tomatoes and mild green chilis along with salt and black pepper. Simmer for 2-3 minutes.
  7. Return chorizo to the skillet and create wells for the eggs.
  8. Crack the eggs into the wells and sprinkle with cotija cheese.
  9. Bake for 5-7 minutes until the eggs are set to your liking.
  10. Garnish with cilantro and serve hot, optionally with avocado slices.
