Ingredients
  

For the Beef
  • 1 lb Ground Beef or ground turkey for leaner option
  • 4 cloves Garlic minced
  • 2 tablespoons Sesame Oil essential for flavor
  • 1/4 cup Soy Sauce/Coconut Aminos use coconut aminos for gluten-free
  • 2 tablespoons Sugar-Free Sweetener like erythritol
  • 1 tablespoon Rice Vinegar for tangy contrast
  • 1 teaspoon Crushed Red Pepper Flakes adjust to taste
  • 1 teaspoon Ground Ginger
  • 2 scallions Green Onions chopped
  • 1 tablespoon Sesame Seeds for garnish
For the Cucumber Salad
  • 2 cups Cucumbers thinly sliced
  • 1/2 medium Red Onion thinly sliced
  • 2 tablespoons Apple Cider Vinegar
  • to taste Salt & Black Pepper adjust as needed

Method
 

Prepare Cucumber Salad
  1. In a medium bowl, combine thinly sliced cucumbers and red onions. Drizzle with apple cider vinegar, then sprinkle with sugar-free sweetener, salt, and black pepper. Toss until evenly coated and let sit for at least 10 minutes.
Brown Ground Beef
  1. Heat a large skillet over medium-high heat. Add ground beef, breaking it apart with a spatula, and cook undisturbed for about 5-7 minutes until browned.
Add Aromatics
  1. Once browned, reduce heat to medium and add minced garlic and sesame oil. Sauté for 1-2 minutes until fragrant. Then add soy sauce, sugar-free sweetener, rice vinegar, crushed red pepper flakes, and ground ginger.
Finish & Serve
  1. Remove from heat and stir in half of the chopped green onions and sesame seeds. Plate the beef mixture and garnish with remaining green onions and sesame seeds. Serve alongside cucumber salad.
