Preparation Steps
  1. Prep Ingredients: Finely dice the onions and set aside. Measure cayenne pepper and other spices, then place cracker crumbs in a separate bowl.
  2. Cold Smash: Chill beef for 12 to 24 hours, brine meat with salt for 5 to 10 minutes, divide into 1/3 lb portions, and shape into loose balls.
  3. Seared Cook: Heat skillet, melt butter, smash beef balls into patties, cook for 45 seconds, sprinkle with cracker crumbs, flip, and cook for another 45 seconds.
  4. Buffalo Glaze: Brush each patty with buffalo sauce, cook for an additional 20 seconds, then keep warm in a 200°F oven.
  5. Assemble: Toast buns, layer with blue cheese crumbles, buffalo-glazed patties, caramelized onions, and Romaine lettuce, adding extra buffalo sauce if desired.
