Step-by-Step Instructions
  1. Marinate the Chicken: Combine chicken thighs, soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil in a bowl. Mix well and refrigerate for 30 minutes to 2 hours.
  2. Prepare the Sauce: Whisk together remaining soy sauce, honey, rice vinegar, sriracha, and water until well combined; set aside.
  3. Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Sear marinated chicken for 5-7 minutes until browned and cooked through; set aside.
  4. Sauté the Vegetables: In the same skillet, add olive oil, chopped onion, bell peppers, garlic, and ginger. Stir-fry for 5-7 minutes until tender-crisp.
  5. Combine and Simmer: Return chicken to skillet, pour in sauce, stir well, and simmer for 3-5 minutes until sauce thickens.
