For the Pasta
  • 12 oz Ziti Pasta Can substitute with penne or macaroni.
For the Filling
  • 10 oz Frozen Chopped Spinach Use fresh spinach if preferred, well-drained.
  • 15 oz Ricotta Cheese
  • 1 cup Mozzarella Cheese Shredded, for topping.
  • 0.5 cup Parmesan Cheese Grated.
For the Sauce
  • 1 cup Tomato Passata Can substitute with crushed tomatoes.
  • 3 cloves Garlic Cloves Minced.
  • 1 tbsp Dried Italian Mixed Herbs Or swap with oregano, basil, or thyme.
  • 1 tsp Chili Flakes Adjust to taste.
  • 1 tbsp Sugar To balance acidity.
  • 1 tsp Salt To taste.
  • 0.5 tsp Black Pepper To taste.
  • 2 tbsp Extra Virgin Olive Oil

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (180°C). Lightly grease your baking dish with olive oil.
  2. Mix together the tomato passata, extra virgin olive oil, minced garlic, and dried Italian herbs in a bowl.
  3. Boil a large pot of salted water, add ziti pasta, and cook until 1 minute less than package instructions. Reserve 1 cup of pasta water before draining.
  4. In a mixing bowl, combine ricotta cheese, grated parmesan, and well-drained spinach. Season with salt and black pepper. Add reserved pasta water if the mixture is too thick.
  5. Fold the cooked pasta into the ricotta and spinach mixture and transfer it to the greased baking dish.
  6. Pour the tomato sauce evenly over the pasta mixture and sprinkle mozzarella cheese on top.
  7. Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes.
  8. Let it cool slightly before serving, optionally garnish with fresh basil.
