Step-by-Step Instructions
- Preheat your oven to 350°F (180°C). Lightly grease your baking dish with olive oil.
- Mix together the tomato passata, extra virgin olive oil, minced garlic, and dried Italian herbs in a bowl.
- Boil a large pot of salted water, add ziti pasta, and cook until 1 minute less than package instructions. Reserve 1 cup of pasta water before draining.
- In a mixing bowl, combine ricotta cheese, grated parmesan, and well-drained spinach. Season with salt and black pepper. Add reserved pasta water if the mixture is too thick.
- Fold the cooked pasta into the ricotta and spinach mixture and transfer it to the greased baking dish.
- Pour the tomato sauce evenly over the pasta mixture and sprinkle mozzarella cheese on top.
- Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes.
- Let it cool slightly before serving, optionally garnish with fresh basil.
