- In a medium skillet over medium heat, crumble and cook the sweet Italian sausage for about 5-7 minutes, stirring occasionally until it’s thoroughly browned and no longer pink inside.
- Peel the sweet potato and using a spiralizer, create spirals until you have approximately 2 cups of sweet potato spirals.
- In a large bowl, whisk together the shredded cheese, eggs, milk, and salt until smooth and creamy.
- Grease a 9"x13" baking dish with cooking spray or olive oil to prevent sticking. Carefully pour the combined mixture into the prepared dish, spreading it out evenly.
- Preheat your oven to 375°F (190°C) and bake for 40-45 minutes, until the center is set.
- Let the casserole cool slightly for about 10 minutes before slicing and serving.
