Ingredients
  

Dough
  • 2 cups All-purpose flour Preferably chilled for best texture
  • 1 teaspoon Sea salt Essential for seasoning
  • 1/2 cup Unsalted butter Chilled and cubed
  • 1/4 cup Chilled water Add more if needed
  • 1 large Egg Can substitute with a vegan alternative
  • 1 tablespoon Apple cider vinegar Or lemon juice for tenderness
Filling
  • 1 pound Ground chorizo Main filling ingredient
  • 1/2 pound Minced pork Adds texture and protein
  • 1 teaspoon Paprika Adjust quantity to taste
  • 1 medium Onion Finely chopped
  • 2 cloves Garlic Double for stronger flavor
  • 1/4 teaspoon Cayenne pepper Omit for a milder taste
  • 1 cup Oaxaca cheese Can substitute with mozzarella
  • 1/2 cup Manchego cheese Can exchange for any firm cheese

Method
 

Dough Preparation
  1. In a large mixing bowl, combine flour and sea salt. Cut in butter until mixture resembles coarse crumbs.
  2. In another bowl, whisk together water, egg, and vinegar. Create a well in the flour mixture, pour in wet ingredients, and mix until a soft dough forms.
  3. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
Filling Preparation
  1. Heat olive oil in a pan over medium-high heat, add onions and sauté until soft.
  2. Add ground chorizo and minced pork, cooking until meat is fully cooked.
  3. Stir in paprika, garlic, and cayenne, season with salt and let cool.
Hand Pie Assembly
  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out dough to 1/8-inch thickness and cut with pumpkin-shaped cookie cutter.
  3. Layer chorizo filling and cheese on half, moisten edges with water, and seal with cutouts.
Baking
  1. Place assembled hand pies on the baking sheet and brush tops with egg wash.
  2. Bake for 20-30 minutes until golden brown and filling is bubbling.
  3. Let cool slightly before serving.
